This week I made sugar cookies with an Autumn theme!
For the cookies, first I made the dough:
Ingredients
- 1 cup white sugar
- 1 cup butter
- 1 tsp vanilla
- 2 eggs, well beaten
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt

With an electric mixture, beat sugar, butter and vanilla until mixture is creamy, about 2 minutes. Scrape downsides of the bowl. Add eggs beating after each egg; beat thoroughly.

In a separate bowl combine flour, baking powder and salt. Beat the dry ingredients into the creamed mixture.

Roll out cookie dough to 1/4″ onto a lightly floured board. For best results, do not roll cookie dough too thin. Use cookie cutters of your choice for a variety of different shapes and sizes. I used a leaf, squirrel, deer, acorn, and pumpkin! Place cookies on parchment-lined cookie sheets.

Bake at 350°F (180°C) for 10 minutes or until the underside of cookies turn golden brown.
While these were placed in the oven, I started on the icing!
Icing
- 1 1/2 cups (375 mL)icing sugar
- 3 tbsp (45 mL)milk
- 1/8 tsp (0.5 mL)almond extract
- food colouring

Combine icing sugar with milk to reach the desired spreading consistency. Stir in food colouring or leave icing white. Using a pastry brush, paint frosting over cooled cookies and decorate with coloured sugar.
Before I added my food colouring, I had to access which colours I would need. I decided upon orange, brown, white, and black.
After my cookies had cooled, it was time to decorate! This part took a lot longer than I had expected (around 2 hours) and I’m not entirely happy with the result. They’re alright but I wish I had a steadier icing hand!
They were yummy though!!
