Pizookie!

Today was a gloomy day and my roommate and I decided we needed a fun treat to cheer us up. So, we made pizookies! A pizookie is the combination of a pizza and a cookie. They are typically baked in a large dish but we put ours into mugs. A pizookie has a soft, melty inside and a nice baked outside.

We made a chocolate chip pizookie using this recipe:

Ingredients

  •  cup unsalted butter
  •  cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 egg yolk
  • ½ cup all-purpose flour + 2 tablespoons, fluffed and levelled
  • 1 teaspoon vanilla
  • ¼ teaspoon baking soda
  • ½ cup of chocolate chips

Instructions

  • Preheat oven to 350°F and lightly grease a 6-8″ cast iron skillet.
  • In a medium microwave-safe bowl, melt the butter on high in 15-second intervals.
  • Add in the sugars and mix with a spoon until combined.
  • Add in egg, stirring quickly to incorporate.
  • Add flour, vanilla, baking soda and mix with a spoon until completely combined.
  • Add to iron skillet, mug, or bakeware of your choosing!
  • Bake for 20-22 minutes* or until edges are crispy and center is just set.
  • Let cool slightly before topping with ice cream and serving!

As they were cooling we noticed they began to concave…

So we put them back into the oven for a few more minutes and decided it was fine since they would be covered in ice cream anyway!!
